Citrus Roasted Asparagus

There are so many times during the year that I want to enjoy asparagus with my steak. It's tough to find a good sweet bunch of these amazing little green sticks outside of springtime though.

This recipe works great to celebrate the flavor and versatility of asparagus either in or out of season. The natural pairing of sweet acidity that orange brigs with it is a perfect compliment to the umami flavor profile of asparagus.

This makes a great side dish for family events or just a simple weeknight meal. The best part about it, if you pay attention to the roasting time and cook the vegetables just to the point of al dente, preserving some of the crunch, these taste great cold as part of an antipasto or salad.

Ingredients
 1 lb Asparagus, trimmed
 1 tbsp Extra Virgin Olive Oil
 1 tsp Ground Coriander
 Zest and Juice of 1 Orange
 1 Clove Garlic, Minced
 Salt & Pepper to Taste

Instructions
1

Trim one pound of asparagus to break off the hard woody part of the stem.

2

Arrange asparagus on a sheet of heavy duty foil.

3

Drizzle with olive oil, season with salt and pepper and ground coriander.

Zest an orange and sprinkle the zest over the asparagus. Cut the orange in half and squeeze juice over the seasoned asparagus.

Toss to mix well. Seal up the foil into a package. Roast at 425 for 15-20 Minutes
